Chilli chargrilled prawns - Recommended Recipe!



Chilli Chargrilled Prawns - makes 8, takes 10 mins to make, 15 mins to marinate, about 8 mins to cook on the BBQ from raw or 5 mins for cooked prawns (or cook for the same amount of time in a griddle or frying pan)

Ingredients
288g raw tiger prawns or the equivalent weight of cooked king prawns
8 kebab sticks (if using wooden, soak in water first to stop them from burning)

For the marinade
2 tbsp olive oil
1 tsp Dijon mustard
Large pinch hot chilli powder or ½ red chilli, deseeded and finely chopped (optional)
Juice and zest of ½ lemon
To serve, lemons, cut into wedges (throw on the BBQ for a slightly charred flavour)

Method

  1. Thread the prawns onto the kebab sticks. Put all of the marinade ingredients into a large shallow dish (long enough for the kebab sticks) and mix together.  Add the prawns andleave to marinade for 15 mins.
  2. Cook the raw prawns on the BBQ for about 8 mins or until pink all over and slightly charred.  If using cooked prawns, barbeque for just a few minutes until slightly charred.

Per serving: 115kcal, 6.9g fat, 1.0g saturated fat, 0.1g sugars, 0.4g salt.

Sweet honey chicken kebabs - Recommended Recipe!



Sweet Honey Chicken Kebabs - serves 8, takes 10 mins to make plus 2 hours to marinate plus 25-30 mins to cook (oven or BBQ)

Cut 650g chicken breast fillets into chunks, place in a bowl with the marinade ingredients from Sweet Honey Chicken (recipe here).  Chill for 2 hours.  Thread chicken and veg pieces (2 courgettes, 1 sweet pepper,  1 red onion) onto 8 kebab sticks.  Cook on a BBQ or in a pre-heated oven at 200C/Gas 6 for 25-30 mins.

Per serving: 165kcal, 5.9g fat, 1.2g saturated fat, 8.3g sugars, 0.2g salt.

Sizzling Jamaican beef skewers - Recommended Recipe!



Sizzling Jamaican Beef Skewers - serves 8.  Makes 24 sticks.  Takes 25 mins.

Ingredients
1 kg beef mince
8 salad onions, trimmed and finely chopped
3 tbsp jerk seasoning
Olive oil spray, for cooking
Mixed salad, to serve

Method

  1. Place 24 wooden bamboo skewers into a bowl of cold water and leave to soak for at least 30 mins, or overnight if possible – this will stop the wood from burning on the BBQ. 
  2. Place the beef, salad onions,  jerk seasoning and a pinch of salt into a large bowl.  Using your hands, mix the ingredients together until really well combined. 
  3. Shape a fairly large tablespoon of mixture around the end of one of the prepared sticks to make an oval shape about 4-6 cm long – dipping your hands in cold water first will make shaping the meat easier.  Set aside and continue with the remaining mixture to make 24 beef skewers. 
  4. Spray the meat with olive oil to give it a light coating, then cook on the BBQ for 12 minutes, turning occasionally, until well browned and cooked all the way through.  Serve with the mixed salad.

Per skewer: 130kcal, 1g fat, 2.8g saturated fat, 2g sugar, 1.3g salt.
